Domaine Eric Forest, established in 2000, represents the culmination of eight generations of winemaking expertise in the Mâconnais region. Eric Forest, mentored by his grandfather and renowned winemaker Jean-Marie Guffens, combines traditional practices with modern techniques to craft expressive and refined Chardonnay wines
Located in Vergisson, within the Mâconnais subregion of Burgundy, the domaine benefits from a temperate climate with significant diurnal temperature variations. This climate is ideal for Chardonnay, allowing for the development of complex flavors and maintaining acidity.
The 'L'Optimum des Hauts de Crays' cuvée is sourced from the 'Les Crays' vineyard, characterized by its steep, south-facing slopes and limestone-rich soils. In the exceptional 2018 vintage, Eric Forest allowed the grapes to hang an additional three weeks post-harvest, concentrating sugars and flavors. The wine was aged for one year in 60% new French oak barrels, followed by another year in terracotta amphorae, resulting in a full-bodied wine with vibrant minerality and depth.
